This biodynamic “Burgundian-style” blend is made with Bronner, Souvignier Gris, and Weissburgunder. Cara marries the Burgundy varieties and PIWI varieties in a charming, mineral and salty blend representing the complexity of the vineyard.

With gentle maceration, spontaneous fermentation, and long lees aging, it delivers savory tobacco, grapefruit, herbs, and pear, framed by juicy acidity and a salty-mineral finish—wine lovers have given its 2019 vintage a hearty 93 points from Falstaff. This wine spent 18 months on the full lees, and then on the fine lees until bottling, for a total of 3 years of maturing in the cellar.
