In 2022, a hot and dry year, the old grape varieties in the co-plantation were more necessary than ever. The wine offers a rich and full-bodied profile, yet perfectly balanced by the freshness of the limestone. Aromas of apricot, white flowers, toasted almonds, and spices. The palate is broad and chiseled, long, extended by very subtle notes of hazelnut.
Grapes were pressed slowly using a pneumatic press after being harvested in crates. For two varieties, the bunches macerated for 3-4 days beforehand. Fermentation took place over two years in a century-old Alsatian foudre, on full lees, as well as in used barrels. In our dry, warm cellar, gentle oxidation occurs during the long aging process, adding aromatic complexity.
We operate as a licensed eating and drinking establishment. You must be 19+ years of age, reside in Ontario and include a food item with the purchase of alcohol. Valid government photo ID must be presented at the time of accepting delivery.
