For the Oude Geuze, young lambic, with at least one year of maturation, and old lambic, with at least two years of maturation, are mixed according to the taste of the Geuze blender. Once in the bottle, the final maturation phase follows. The result is a beer of spontaneous fermentation with a typical taste and beautiful foam head. This gueuze is also described as quite dry, bitter and relatively less acidic.
