Since 1860 the Rivoire-Jaquemin company has been producing and aging the finest Comté. The milk is produced by local farmers who graze their cattle on the mountain grasses. Master affineurs care for the cheese as it ages on spruce planks from the Jura mountains, and rub the rind with Guérande sea salt. The resulting 12-month aged cheese is smooth, fruity and full of character.
