This non-vintage (NV) Charmat-method sparkling wine project was first envisioned at the start of 2016 harvest with the goal of exploring the effects of extended maturation in bulk (rather than in bottle), as well as the impact of blending multiple vintages on the base for a sparkling wine library.

Small volumes of base wine were produced from each harvest between 2016 and 2024, aged individually in neutral French oak, and only minimally topped and tasted over time. The final blend undergoes secondary fermentation in tank, using the Cuvée Close (Charmat) method, to produce its fine bubbles."

We operate as a licensed eating and drinking establishment. You must be 19+ years of age, reside in Ontario and include a food item with the purchase of alcohol. Valid government photo ID must be presented at the time of accepting delivery.

Order online and pick up at our shop (608 College St) during regular business hours.

2-5 business day delivery to most addresses in Ontario serviced by Canada Post. Orders placed on Friday will be processed the following week.
