Merlot is the iconic grape variety used for Bordeaux wines and the fruit we use to produce Saint Lamvinus is from the Côtes de Bourg area. Around eight weeks of soaking allows the lambic to extract all the tannins from the grapes. As in wine production, a good grape harvest will yield a beer with more body and character while a poorer harvest will result in less fruity Saint Lamvinus in which the presence of lambic is more pronounced. The use of grapes grown for wine means that Saint Lamvinus symbolises the link between the worlds of wine and beer.

Given the success of this product we have over the past several years tried out many other combinations with our winemaking friends, most of whom have adopted a biodynamic and completely natural approach to agriculture. These very limited production batches are only available for tasting at the brewery. Blend of lambics aged on average 16 to 18 months and of Merlot grapes.

We operate as a licensed eating and drinking establishment. You must be 19+ years of age, reside in Ontario and include a food item with the purchase of alcohol. Valid government photo ID must be presented at the time of accepting delivery.

3-5 business day delivery to most addresses in Ontario serviced by Canada Post. Orders placed on Friday will be processed the following week.
