In a tiny room in the Saint-Malo Industrial Park in Quebec City, freshly squeezed apple juice slumbers inside plastic vats. Slowly, but surely, the fermentation will take over the liquid thanks to the yeasts naturally present on the fruits, intruders feared by the manufacturers. Cider infused with lilacs flower, apple flowers, elderflowers & wild roses. Disgorged by hand, every flowers were hand picked around town and in the country side. Great acidity, floral, perfect for the summer afternoon or aperos.
